Make cocoa sponge. Add 50g wheat flour and純ココア大さじ2を加え、合わせてふるいます
2 tablespoons of pure cocoa and sieve.卵3個を割り入れ、溶きほぐしましょう
Break 3 eggs and beat.砂糖70g を加え、白身の部分を切るようにして細かく切ります
Add 70g of sugar, beat well to dissolve the egg white.50度程度の湯に当て、卵が40度ほどになるまで混ぜます
Immerse in hot water of about 50 degrees, mix untill the eggs reach 40 degrees.湯せんから外し、帯状にトロトロ散るまで、3分程泡立てます
Take out from hot water, beat for about 3 mins till the mixture is stiff.薄力粉と純ココアを加え、ふるいます。そこから持ち上げ切るように混ぜましょう
Add flour and pure cocoa and sieve. Then mix like lifting.クッキングシートを敷いた型に流し入れ、5センチの高さから3回落として空気を抜き
